Nine times out of ten visual appeal is why a cupcake gets eaten. There are many ways to flower up your cupcakes to tempt any passerby, but food shouldn’t be consumed on looks alone. If it doesn’t taste good, it should be eaten. This cupcake recipe tastes good.
Moist Chocolate Cupcakes (makes 12)
1 egg
1 c. sugar
½ c. milk
⅛ c. apple sauce
⅛ c. vegetable oil
1 tsp. vanilla extract
¾ c. bread flour
½ c. cocoa powder
¾ tsp. baking powder
¾ tsp. baking soda
½ tsp. salt
½ c. boiling water
Blend the egg and sugar until creamy. Add milk, apple sauce, oil, and vanilla and cream until smooth. In a separate bowl mix only the dry ingredients; flour, cocoa, baking soda, baking powder, and salt. Add dry mixture to the sugar mixture until it’s blent. Add the boiling water.
Batter will be thin. Fill cupcake slots ¾ full and bake at 350 degrees Fahrenheit for 20 minutes. Test with a toothpick. Depending on the type of oven and calibration, cupcakes may need 5 minutes longer. Cool and decorate. Tops will be a little sticky.
